For hundreds of years, the native tribes of Arizona and New Mexico cultivated blue corn, also known as Hopi Corn, for its unique color, texture, and sweet complex flavor it gave to tribal breads. Blue corn has also been said to have spiritual significance. Within the Native American culture it represents the rising sun, wisdom, understanding and the beginning of life. By the early 1980’s, the increasing need for easier harvests nearly put blue corn into extinction. Fortunately, today’s interest in healthier eating has led to the remarkable comeback of blue corn. It’s about 30% higher in protein than its yellow and white counterparts, and modern Americans have come to enjoy its hearty, nutty taste. The revival of blue corn has been a large part of the inspiration behind the creation of Blue Burrito Grille and our ongoing mission to provide the freshest, healthiest, and most delicious Mexican fare available.

 

Blue Burrito Grille was founded in 1995 in response to a growing demand for healthy Mexican cuisine. We guarantee our customers that the food they are consuming is not only good for their health, but that it’ll taste great too!
